Okay, im not a real vegan, but I really enjoy some meat-less foods now and then, this recipe is a Norwegian dish called Pyttipanne, it’s all about using whatever you got on hand and fry it together in a pan. I think most countries got something like this, its super nutricious and taste really good! Here’s what I used:
- 1 sweet potato
- some cauliflowers
- 1 onion, I used both red and yellow
- I sweet bell pepper
- mushrooms
- little spring onion.
- little chilli
- lots of spices, I love chilli and garlic spice
the reason I use sweet potato is, much more nutritious than regular potato. It has lots of beta carotene, lots of fiber and much less carbs than regular potato. almost no fat, and it can have some positive effect on women’s hormones.
